Tastier semi-dried tomatoes
The Easiest of RecipesHeat the oven to 100 Celsius.
- Wash and cut your chosen quantity of tomatoes and place them on greaseproof paper on a tray before placing in the oven. - Lightly spray them with olive oil and scatter a little salt over the fruit. - Leave for 3 hours turning the tray if your oven cooks/dries them out irregularly. - Leave to cool in the oven and use warm or cold. Less chewy than store bought
Those dried tomatoes that you buy at the Deli taste wonderful but they're often tough and chewy. Use this recipe to prepare lovely, intense tasting semi-dried tomatoes in salads and other combinations. Depending when and where you buy them, your salad tomatoes will have anything from a fresh slightly sweet taste to an 'acidy' and watery consistency. Whichever tomatoes you use, this brings out the real flavours. Make a batch and eat them within a few days or if you want to store them for longer, just cover them with olive oil to preserve the taste and texture. |
